    I have the go to Brisket recipe. Smoking brisket is an art. A friend of mine is a well known restauranteur in California and she can’t find any better!!

  18. DRJ – The Rub for a 8-12# Brisket. Costco Prime is the best brisket I’ve found. Anywhere.
    3/4 cup paprika One you prefer
    1/4 cup ground black pepper I use a combo of green, red and black peppercorns
    1/4 cup kosher salt
    1/4 cup Turbinado sugar
    2 tbs chilly powder I prefer New Mexico chill powder as it has some heat
    2 tbs garlic powder
    2 tbs onion powder
    2 tsp cayenne
    3 tbs hickory salt

    Marinade
    3 tbs rub
    12 ounces beer
    1/4 cup water
    1/2 cup cider vinegar
    1/4 cup canola oil
    1 can chipotle chillies with adobo sauce
    1 tablespoon worcestershire sauce
    1 medium onion chopped

    puree the marinade with the brisket in a plastic bag pour the marinade over the brisket place in fridge for 12-24 hours. Drain and discard the marinade. Pat the brisket down with all but 2 tablespoons of the rub. Let the brisket set out for an hour. Smoking between 200 and 225 put the brisket fat side up for 3 -3/12 hours [size matters]. Place the brisket on a sheet or two of heavy duty aluminum foil, pat the remaining rub on and seal the foil tightly. smoke for another 1/12- 2 hours until it reaches 203 degrees f. Let it sit for 20, or plan to have it done early as much as 2 hours. Carefully open the foil and let the steam out, 2-3 minutes, reseal the foil. wrap it in a old towel and put it in a cooler until you want to serve. FTC. Foil, Towel Cooler. Doing this allows the fat to work back into the brisket like a reverse marinade! I have kept it at a serving temp for 7 hours doing the FTC. And it was perfect. I don’t suggest it but sometimes the product smokes quick due to fat make-up. Enjoy, DRJ.

  20. What haopened to zinc acetate lozenges? They seem to have disappeared from the market several years ago. Cepacol doesn’t seem to make them any more, and I don’ know who, if anybody, does. Sometimes searches turn uop other things.

  46. That’s a complicated brisket recipe, mg. And you’re right, smoking brisket is an all day task.

    That’s why I prefer to order from the New Braunfels Smokehouse. They have such a wide variety of smoked meats, and their brisket is really good. They also offer a wide variety of sides, deserts, and candies; they are the only site I know that serves Heavenly Divinity, and their praline pecans are delicious. Prior to finding Heavenly Divinity, which is like the best candy in the world, at the New Braunfels Smokehouse, the only time I got to eat it was when my Aunt Alma made it, many years ago when I was a child in San Antonio. Then my family would take regular trips to New Braunfels for fresh smoked meats, because my father had a thing for Cornish game hens. Now of course you can order online and have a feast shipped to your door. https://www.nbsmokehouse.com/

    But everyone knows the best barbecue in Texas is to be found in Lockhart, particularly at Kreuz Market. They don’t offer anywhere near the variety as the New Braunfels Smokehouse, but their smoked meat cannot be beat, and their brisket is to die for. Used to be the only way you could get that was to drive to Lockhart and stand in line. Seriously, people would drive for miles and miles, and the waiting line would stretch down the block all day long. That’s how good their smoked meats are. Back then it would often take hours just to get to the counter to place your order. There were some tables and chairs if you wanted to eat there, but Kreuz really wasn’t a restaurant; it was a smoked meat market. You ordered however much of which meats you wanted, served wrapped in brown paper, and the clerk would ask the immortal barbeque question, “Crackers or bread?” Man, it was the absolute best. People would stand in line for hours just to order meats to take home, because it was worth it. Only recently has Kreuz somewhat expanded into more of a restaurant, with live country music in the evenings and the like, but it’s still a smoked meat market. And they followed the New Braunfels Smokehouse in setting up a website with orders for delivery. https://kreuzmarket.com/ I admit I have never ordered from them online, so I can’t vouch for their delivery service, as I can for the New Braunfels Smokehouse, which I have ordered from many times over the years. Because to me, I want the real experience of driving to Lockhart for freshly smoked meats at Kreuz Market; it is the best, bar none. It also happens to be about 400 miles away, so I won’t be making that drive anytime soon.

    As for other meats, I prefer https://www.omahasteaks.com/buy/Steaks, because my mother absolutely loves their stuffed baked potatoes and caramel apple tartlets. A pan-seared steak on a cast skillet with those baked goodies, and she’s in heaven.

    It contains a very interesting podcast of Life Behind Bars, starring David Wondrich. He’s the author of Imbibe!, a history of cocktails in America based on the first bartender’s manual written by Jerry Thomas in 1862, titled How to Mix Drinks, or The Bon Vivant’s Companion. That book had been out of print since 1928, so it took Wondrich some time to find one of the later copies in used book store. Imbibe! is a fascinating book in that it traces alcohol consumption from the Colonial period, when it was mostly punches at town squares, through the invention of the cocktail, Prohibition, and beyond. Bartenders, drink mixers, were like rock stars back in the day; they traveled from port to port–San Francisco, New Orleans, Miami, New York, Chicago, even Japan, selling their concoctions. People like to drink, have for thousands of years. Wine, champagne, beer, gin, whisky, you would be surprised at what people drank back in the day, and Imbibe! includes recipes. That was when people drank 120 proof alcohol. Today, after repeal of Prohibition, is set at 80 proof, except for grain alcohol, like Everclear, which is sold at 100 proof. And Moonshine, which has no percentage proof whatsoever–that shit will blind you.

    Imbibe! is an interesting read, as is Wondrich’s follow-up Punch. The Behind the Bars podcasts discusses how many of the drinks we think we’re ordering have been contaminated by false pretenses. Well worth a listen.

    I have read some of these columns where they say: Can’t we get along? We can’t get along because, first, China doesn’t play fair and has stolen trillions of dollars and millions of jobs from America and seeks to keep doing it. They have been duping our Presidents, pushing them around, making agreements, and breaking them. Second, we can’t get along with China because of what it does to its citizens–the Uighurs in Western China and now the citizens of Hong Kong.

    What we have seen with China is that when we are tough and strong, they back off. When we show any glimmer of weakness–as we are showing in floating a deal, a lessening of the restrictions on Huawei–they take advantage.
